Health & Diet Learning Journey Step 4: The Indian Empire Selection
A selection of popular and typical dishes cooked with spices from the British Empire that are set to change the way we Brits eat for ever (in 2002 Chicken Tikka Masala is voted Britain's favourite dish). At home our cooks have adapted the original Indian dishes and added ingredients such as raisins and apples to curries.

Our authentic dishes are based on original recipes from Mrs Beeton's Family Cookery (1909)

Chicken, Curried - Tender chicken cooked with curry spices, coconut, chutney, lemon juice, apple and onion.

Fish Curry - fillet of white fish cooked with green and dried chillies, green ginger, turmeric, cumin seeds, fenugreek, garlic and tamarind juice.

Mutton, Curried - lean mutton cooked in a cream sauce seasoned with onions, green ginger, saffron, cloves, cardamoms, limes juice, garlic and thickened with pounded almonds

Dal - lentils simmered gently and flavoured with fried onions and curry spices.

Pilau of fowl - a sensational dish of spicy roasted fowl served on a bed of raisin and almond rice garnished with sliced hard boiled egg.

All curries served with plain boiled rice and a selection of relishes such as mango chutney, pickled limes and tamarind sauce.

Try our speciality Indian chutney - Raisins, ginger, cayenne pepper and mustard soaked for 24 hours in a sauce of apples, onions and garlic cooked with salt, sugar and vinegar.
